It was a few years since my last visit and I wondered if the delicious gluten free Indian meal I'd enjoyed the first time could be repeated. To my delight when we turned onto The Docks in Athlone, Mother India was still there situated on the corner.&nbsp; A cheerful invite at the door immediately made us feel welcome. We hoped to get the window seat upstairs overlooking the Shannon (best seat in the house!), however as it was already reserved we sat in the cosy room downstairs. There is an extensive and varied menu at Mother India, which immediately gets the taste buds going. The mains of Chicken Tikka Karahi-chicken cooked in medium sauce fresh garlic, ginger with a touch of yoghurt &amp; the Chicken Balti-a typical Punjabi dish prepared in a karahi with spices, garlic, ginger and finished with a touch of yoghurt were complimented by freshly cooked Pailu rice, which was delicately flavoured with herbs and spices. Both dishes were perfectly cooked and aromatic, just as I remembered from our previous visit if not better. Following our main courses and bottle of wine we finished with a favourite of ours, which we first tried at Mother India, a traditional Punjabi tea prepared with spices, milk and sugar. Again this was just how I remembered and a really nice way to finish off a spicy meal. <br />The staff were helpful with any gluten free requests and prices are very reasonable. This restaurant has a very good selection of food and drink with fabulous views over looking the beautiful harbour.&nbsp; Upon arrival I asked the waiter about gluten free options and produced a laminated card with details of what I can/cannot eat in Spanish.&nbsp; I make these cards in advance of trips abroad to ensure I can communicate my coeliac needs in the relevant language of each country I visit.&nbsp; This method has proved very successful as there is no confusion or language barriers with the chefs.&nbsp; The waiter understood immediately and said gluten free options on their menu would be no problem.&nbsp; Another waiter arrived and asked who is the coeliac, and served me two gluten free bread rolls before my meal. These were warm, extremely fresh tasting and such a nice touch.&nbsp; The swordfish I had for my main was delicious, served in a creamy fish sauce with canarian potatoes and grilled vegetables.&nbsp; Accompanied by a white Torres San Valentin wine this was an excellent start to the holiday. <br><span></span></div><hr  style=" clear: both; visibility: hidden; width: 100%; "></hr><span class='imgPusher' style='float:left;height:0px'></span><span style=' float: left; z-index: 10; position: relative; ;clear:left;margin-top:0px;*margin-top:0px'><a><img src="http://www.coeliaccoach.com/uploads/3/0/2/5/3025224/3152376.jpg" style="margin-top: 5px; margin-bottom: 10px; margin-left: 0px; margin-right: 10px; border-width:1px;padding:3px;" alt="Picture" class="galleryImageBorder" /></a><div style="display: block; font-size: 90%; margin-top: -10px; margin-bottom: 10px; text-align: center;"></div></span><div  class="paragraph editable-text" style=" text-align: left; display: block; ">During our holiday it was my mother&rsquo;s birthday and she decided to celebrate at <a style="font-weight: bold;" title="" target="_blank" href="http://www.canarynightlife.net/lanzarote/venues/indianzaffran/indianzaffranPDC.htm">The Indian Zaffran</a>,  Calle Juan Carlos I, Puerto del Carmen in the Old  Town.&nbsp; I choose my  moment without her hearing and told the waiter it was her birthday and  would they have a desert with a candle to celebrate. He smiled and to be  honest I didn&rsquo;t really know if he understood my request, never matter I  thought and continued to enjoy another fabulous gluten free meal. Chelsea has a gluten allergy so decided on a whopping nine tiers, 500 pounds and 4 feet tall wedding cake, created by New York bakery <span style="font-style: italic;">La Tulipe Desserts. </span>Ingredients included  360 organic eggs, 50 pounds of sugar, 45 pounds  of gluten-free flour, 30 pounds of butter and bittersweet chocolate, and  was decorated with about 1000 sugar flowers! <br /><br />We may not want a wedding cake with all those calories!! But it's wonderful to see an increased availability of gluten free wedding cakes. Some Coeliac brides have found it difficult to source cake suppliers who can adapt a gluten free recipe to a larger sized cake. They decide to go with a tradition cake rather than create a fuss and get on with other wedding plans. Pineapples are a symbol of hospitality so why not try this Gluten Free variation of the popular Pineapple Upside-Down cake. I recently tried out this recipe using Gluten Free flour and was delighted with the light texture of the cake and how easy it was to make.<br /><strong><br />Gluten-Free Pineapple &amp; Almond Upside-Down Cake Recipe<br /></strong>Preparation: 20 minutes<br />Cooking: 40-45 minutes<br /><br /><strong>Preparation<br />       </strong>Removing Skin: Cut off the top and bottom of the pineapple. Stand the         pineapple upright and slice the skin off using a knife. <br /><br />       Coring: Remove the skin, then using a small circular cutter, stamp out         the core. <br /><br />Heat the oven to 180<span style="font-size: 12pt; font-family: Symbol;"><span style="">&deg;</span></span>C/350<span style="font-size: 12pt; font-family: Symbol;"><span style="">&deg;</span></span>F/gas 4(160<span style="font-size: 12pt; font-family: Symbol;"><span style="">&deg;</span></span>C for fan ovens).<br />In a bowl, beat <span style="font-weight: bold;">50g softened butter </span>and <span style="font-weight: bold;">50g of caster sugar</span> and spread over the bottom of a 22cm round loose bottomed cake tin. Peel and core<span style="font-weight: bold;"> 1 medium pineapple</span>, slice into rings and arrange on top of the butter mixture.&nbsp; Beat together with a wooden spoon <span style="font-weight: bold;">125g softened butter</span> and <span style="font-weight: bold;">125g caster sugar</span> until pale and fluffy.&nbsp; Gradually beat in <span style="font-weight: bold;">2 eggs</span>, then sift in <span style="font-weight: bold;">100g Dove Farm Gluten &amp; Wheat Free Plain White Flour (or any other plain GF flour mix),</span> <span style="font-weight: bold;">1 tsp Gluten Free baking powder </span>and add <span style="font-weight: bold;">50g ground almonds</span>. Mix well to form smooth batter.&nbsp; Spoon the mixture over the pineapple and bake for 40-45 minutes, until risen and firm to the touch. You may like to place a tray underneath as some butter may melt through loose bottomed cake tin. Serve on it's own or with whipped cream. My mouth watered when I read about the  Squid Churmura, but I instantly thought it would be covered in a wheat  flour batter. When I asked the waiter about this he said that a gluten  free alternative could be prepared, this was no problem as they have  many Coeliacs and Vegetarians come to the restaurant with different  needs and everything is freshly prepared upon request. What a treat and  it tasted delicious. <br>The main courses of Chicken Karahi and Kashmiri  Roganjosh were equally delicious and the pilau rice came fragrant and  flavorsome. Desert was ice-cream, which went down well after the spicy  main course! <br><br>Yet again another tasty meal without any Gluten Free  complications or fuss.
